This classic high tea loaf is a simple and easy recipe to make for guests coming over for tea or to add to a formal high tea menu. Serve alone or with butter.
Ingredients
10 tablespoons sultanas
12 dried apricots (chopped)
1 tablespoon golden syrup
4 teaspoons butter
4 tablespoons sugar
1 ¼ cup (fl. oz.) boiling water
1 teaspoon baking soda
2 cups (10 oz.) self-raising flour
Method
Preheat the oven to 180 degrees (350F).
Put all ingredients, except the flour and water, in a bowl. Pour boiling water over the mix. This will melt the butter.
When butter is melted mix in the flour. Pour the mixture into a lined tea loaf tin.
Bake for 50 minutes
Let the loaf cool before slicing.
